Currently, some associations – like Asociación de Productores de Azafrán del Jiloca or AZAJI-is working hard for the product to get the EU formal status.The extreme delicacy of saffron plant requires manual work incultivation and processing of the product. That is one of the reasons why saffron is considered the most expensive spice in the world, because its price can exceed the 3000 € / kg.
